{"id":2499,"date":"2019-12-17T13:14:05","date_gmt":"2019-12-17T13:14:05","guid":{"rendered":"https:\/\/projectorigin.coffee\/?p=2499"},"modified":"2022-02-14T11:21:44","modified_gmt":"2022-02-14T11:21:44","slug":"competitor-interview-winston-thomas","status":"publish","type":"post","link":"https:\/\/projectorigin.coffee\/es\/competitor-interview-winston-thomas\/","title":{"rendered":"Entrevista con el competidor: Winston Thomas"},"content":{"rendered":"<p><strong>Recientemente gan\u00f3 su competencia regional y se dirige al Campeonato Sudafricano de Baristas. \u00bfPuedes contarnos un poco sobre tu desempe\u00f1o regional?<\/strong><\/p>\n\n\n\n<p>Trat\u00e9 de mantener el rendimiento simple. Teniendo en cuenta que ten\u00eda un tema diferente para Nacionales si lo hubiera logrado. Estaba leyendo los 7 h\u00e1bitos de las personas altamente efectivas y encontr\u00e9 una imagen ilusoria en la que ves a una mujer mayor o joven. Durante mi set, ten\u00eda una imagen de una mujer joven en el extremo opuesto de la mesa para influir en la percepci\u00f3n de los jueces y para que vieran a una mujer joven en la ilusi\u00f3n en lugar de a una anciana. Esto es exactamente lo mismo que nuestros consumidores experimentan a diario, excepto que el barista influye en su percepci\u00f3n en muchos niveles diferentes.<\/p>\n\n\n\n<p>Luego dije que el barista puede influir en la percepci\u00f3n de los consumidores de una manera positiva y significativa mediante el uso de la excelencia, la coherencia y la familiaridad. El espresso representaba excelencia y la leche representaba consistencia. Mi bebida insignia representaba la familiaridad y para ello cre\u00e9 un refresco de cola de caf\u00e9 haciendo una versi\u00f3n casera del jarabe 7x de Coca Cola. Contiene especias, bastante az\u00facar y c\u00edtricos. Debido a la naturaleza c\u00edtrica del espresso Thageini, emit\u00ed naranja pero a\u00fan us\u00e9 lim\u00f3n. Agregu\u00e9 el jarabe y el espresso al hielo y lo remat\u00e9 con un poco de agua con gas para reducir la dulzura y darle un aut\u00e9ntico gaseoso.<\/p>\n\n\n\n<p><br><strong>\u00bfQu\u00e9 fue lo primero que te hizo decidir competir en las competencias de baristas?<\/strong><\/p>\n\n\n\n<p>La tostadur\u00eda en la que trabaj\u00e9 ten\u00eda una larga lista de anteriores Campeones de Baristas de SA, por lo que hab\u00eda una cultura de competencia saludable. Pero tambi\u00e9n ten\u00eda muchas ganas de aprender m\u00e1s sobre el caf\u00e9 y mi Jefe de Barista en ese momento dijo que no hab\u00eda mejor manera que participar en la competencia.&nbsp;<\/p>\n\n\n\n<p><br><strong>Has estado en el Campeonato Mundial de Baristas varias veces. \u00bfC\u00f3mo ha visto cambiar los caf\u00e9s y la competencia durante sus a\u00f1os en el escenario mundial, y qu\u00e9 impacto cree que est\u00e1n teniendo estos cambios en los productores de caf\u00e9?<\/strong><\/p>\n\n\n\n<p>Estuve en dos WBC, en 2017 y 2018, con solo 7 meses de diferencia, por lo que no he sido testigo de un cambio significativo mientras compet\u00eda en el WBC. Pero desde que comenc\u00e9 a competir en 2016 hasta ahora, parece que ha habido un cambio de caf\u00e9s enfocados en variedades como Geisha a caf\u00e9s enfocados en procesos como CM o Anaer\u00f3bico. No es que muchos competidores hayan ganado usando Gesha en los \u00faltimos a\u00f1os, pero es seguro decir que el perfil de sabor se presta bien para obtener puntajes altos. Ciertos cambios en las reglas dan a los competidores m\u00e1s libertad para brindarles a los jueces una experiencia personal. En general, hay tantas opciones y enfoques para competir en 2020.<\/p>\n\n\n\n<p>\u00bfQu\u00e9 impacto tiene esto en el productor? Con los caf\u00e9s enfocados en el proceso, ha habido mucha experimentaci\u00f3n por parte de los productores, lo que brinda a los competidores diferentes opciones para elegir. Pero esta no es una forma sostenible para que un productor se gane la vida a largo plazo. Sin embargo, les da a los productores desconocidos la oportunidad de mostrar sus caf\u00e9s al mundo, brind\u00e1ndoles una plataforma que podr\u00eda no haber sido posible si no fuera por el WBC.&nbsp;<\/p>\n\n\n\n<p><br><strong>\u00bfCu\u00e1l es su proceso de selecci\u00f3n de un caf\u00e9 para las competencias (cata muchas muestras, alguien elige por usted, cu\u00e1ntas prueba)?<\/strong><\/p>\n\n\n\n<p>Como competidor africano, solo voy a usar caf\u00e9s africanos, por lo que reduce bastante las opciones. Para ser honesto, no tengo una estructura establecida para elegir caf\u00e9s para Comp. En el pasado, se basaba en el tema de mi juego, la singularidad del caf\u00e9, el precio o si el caf\u00e9 se destacaba o no en la mesa de cata en comparaci\u00f3n con todas las muestras consideradas. Otro factor es lo que es accesible para m\u00ed en funci\u00f3n del precio (lo que puedo pagar como independiente) o si un productor pondr\u00eda o no un caf\u00e9 a mi disposici\u00f3n (como un competidor relativamente desconocido).<\/p>\n\n\n\n<p>El \u00fanico factor que tiene que ser constante es si el caf\u00e9 es lo suficientemente delicioso como para servirlo en el escenario.<\/p>\n\n\n\n<p><br><strong>\u00bfQu\u00e9 te hizo decidir usar el caf\u00e9 que hiciste para tu competencia m\u00e1s reciente?<\/strong><\/p>\n\n\n\n<p>Nunca hab\u00eda probado un keniano procesado naturalmente. Y con los Nacionales y posiblemente un WBC en mente, pens\u00e9 que ser\u00eda un buen comienzo para lo que podr\u00eda ser un caf\u00e9 o un caf\u00e9 similar para usar en las competencias que siguen.&nbsp;<\/p>\n\n\n\n<p>El Thageini tambi\u00e9n tiene un equilibrio de lo que me gusta en los caf\u00e9s procesados naturales y lavados: dulzura y cuerpo con claridad y un perfil de sabor &quot;limpio&quot;.&nbsp;<\/p>\n\n\n\n<p><br><strong>\u00bfTiene un origen\/proceso\/perfil de sabor favorito? \u00bfPor qu\u00e9?<\/strong><\/p>\n\n\n\n<p>No en particular. Como dir\u00eda la mayor\u00eda de los cafeteros, la magia del caf\u00e9 es la variedad de perfiles de sabor que se pueden lograr con diferentes or\u00edgenes, variedades y procesos. Y elegir uno en particular ser\u00eda como elegir si amo m\u00e1s a mi mam\u00e1 o a mi pap\u00e1 \ud83d\ude42&nbsp;<\/p>\n\n\n\n<p><br><strong>\u00bfHacia d\u00f3nde ve el futuro de los caf\u00e9s africanos?<\/strong><\/p>\n\n\n\n<p>Me gustar\u00eda verlo en una direcci\u00f3n en la que aumente el consumo interno y se retenga un caf\u00e9 de mejor calidad en los pa\u00edses africanos productores para ese consumo interno espec\u00edfico. Por supuesto, hay muchos factores que explican por qu\u00e9 este no es el caso, pero es algo que me gustar\u00eda ver cambiar y estoy trabajando para cambiar en el futuro.&nbsp;<\/p>\n\n\n\n<p><br><strong>\u00bfQu\u00e9 pueden hacer los consumidores (incluidos los tostadores) a nivel mundial para apoyar y ayudar a desarrollar a los productores de caf\u00e9 africanos?<\/strong><\/p>\n\n\n\n<p>Haga preguntas sobre los caf\u00e9s que compra. Si hay un caf\u00e9 que le gusta, pregunte si estar\u00e1 disponible el pr\u00f3ximo a\u00f1o y, si no, pregunte por qu\u00e9. Presionar por m\u00e1s trazabilidad y discusi\u00f3n. Me he dado cuenta de que hay muchos factores externos que afectan el desarrollo de los productores africanos que difieren de un pa\u00eds a otro pero, a la larga, una conciencia colectiva de los consumidores y tostadores al comprar verde o al por menor puede tener un impacto.<\/p>\n\n\n\n<p><br><strong>\u00bfCu\u00e1l ser\u00eda su consejo para alguien que busca competir en competencias de caf\u00e9 (es decir, c\u00f3mo comienzan)?<\/strong><\/p>\n\n\n\n<p>El primer paso es descubrir por qu\u00e9 quiere competir y establecer objetivos claros para lograr durante toda la experiencia de la competencia.<\/p>\n\n\n\n<p>Y luego encuentre a alguien que haya competido antes para que responda cualquier pregunta que pueda tener y le brinde informaci\u00f3n sobre la preparaci\u00f3n previa a Comp y qu\u00e9 esperar en el escenario.&nbsp;<\/p>\n\n\n\n<p><br><strong>\u00bfQu\u00e9 sigue para ti?<\/strong><\/p>\n\n\n\n<p>Espec\u00edficamente con la competencia, me estoy preparando para que los Nacionales regresen al WBC. El objetivo es ser el primero o parte del primer grupo de competidores africanos en clasificarse autom\u00e1ticamente para las semifinales y m\u00e1s all\u00e1. Una vez que se logre ese objetivo, creo que es importante descubrir c\u00f3mo se puede usar para desarrollar la educaci\u00f3n e impulsar el consumo interno de caf\u00e9 en \u00c1frica. La competencia es una gran v\u00eda y tengo algunas ideas para talleres de compensaci\u00f3n de baristas que me gustar\u00eda poner en marcha en alg\u00fan momento.&nbsp;<\/p>\n\n\n\n<p>Por el momento me he centrado en proyectos de Educaci\u00f3n y Desarrollo del Caf\u00e9 en Ciudad del Cabo, pero me gustar\u00eda extenderlo m\u00e1s all\u00e1 de Sud\u00e1frica y hacia m\u00e1s pa\u00edses africanos.&nbsp;<\/p>","protected":false},"excerpt":{"rendered":"<p>You recently won your regional competition and are heading to the South African Barista Championships.
