Project Origin is excited to announce the launch of its new\u00a0CM Selections<\/em><\/strong> range, a selection of the finest Carbonic Maceration experimental coffee\u00a0lots created across the world in a particular year.<\/p>\n

The Carbonic Maceration (CM<\/span>) process was first introduced to the world by Project Origin founder, Sa\u0161a \u0160esti\u0107 during the 2015\u00a0World Barista Championship\u00a0in Seattle. Since then, Project Origin has researched and developed a range of\u00a0<\/span>Carbonic Maceration<\/span><\/span><\/span>\u00a0techniques in a variety of countries.<\/span><\/span><\/p>\n

CM<\/span><\/i><\/span><\/span>\u00a0Selections<\/i><\/span><\/strong>\u00a0coffees exist in both washed and natural processes and involve the careful control of specific yeasts during fermentation to create particular flavour experiences.<\/span><\/p>\n

“We are really thrilled to be able to share these coffees with roasters around the world,”\u00a0Project Origin General Manager, Habib Maarbani said.<\/p>\n

“The Carbonic Maceration [CM] process creates a consistent and controlled environment in which we can really push and develop the flavour profiles of unique coffees from around the world.”<\/p>\n

In the specialty coffee industry, coffees are\u00a0typically scored, graded and sold according to a score out of 100. However, the lots in the\u00a0CM Selections<\/strong><\/em> range will be publicly listed in one of four categories, based upon their flavour profile.<\/p>\n

“We found that in the case of the [Carbonic Maceration] coffees, we couldn’t really attribute a particular number or score to them,” Maarbani said.<\/p>\n

“We’ve opted for this system of flavour-based categorisation so that the consumer really knows what they’re looking at when they’re searching for a coffee to suit a profile, or a particular experience.”<\/p>\n

The\u00a0CM Selections\u00a0<\/strong><\/em>coffees are available in four categories: Indigo, Jasper, Amber <\/strong>and Diamond.\u00a0<\/strong>Each category, named after a precious jewel, gives a generalised description of different flavour profiles created by the Carbonic Maceration process.<\/p>\n

Several coffees from the\u00a0CM Selections\u00a0<\/strong><\/em>lots have already made their way into the hands of competitors around the world, with some of the first being used publicly at the Melbourne International Coffee Expo (MICE) in late March.<\/p>\n

Roasters can expect to see these coffees offered on the monthly Project Origin product list in the coming weeks.<\/p>\n

CM Selections <\/strong><\/em>categories<\/strong><\/span><\/p>\n

<\/b>Indigo
\n<\/u><\/b>The Indigo range of\u00a0<\/span>CM<\/span>\u00a0Selections\u00a0<\/i><\/span>includes coffees that have a profile of intense flavour, powerful fruit qualities and unique\u00a0aromatics.\u00a0<\/span>This includes coffees that have undergone extensive and experimental fermentation, creating bold\u00a0and strong flavour profiles.<\/p>\n

Jasper
\n<\/u><\/b><\/span><\/span>The Jasper category of\u00a0<\/span>CM<\/span>\u00a0Selections\u00a0<\/i><\/span>includes those coffees which have a\u00a0flavour profile reminiscent of red, orange and yellow fruits. These coffees have undergone a range of carbonic maceration processes, in order to provide maximum flavour and clarity with medium level intensity.<\/span><\/span><\/p>\n

Amber
\n<\/u><\/b><\/span><\/span>The Amber range of the\u00a0<\/span>CM<\/span>\u00a0Selections\u00a0<\/i><\/span>includes coffees that have a delicate flavour profile and sweetness, with a flavour profile of orange and yellow fruits. The\u00a0CM<\/span>\u00a0techniques used to process these coffees look to maximise delicacy and transparency of flavour, rather than intensity.\u00a0<\/span><\/p>\n

Diamond<\/u><\/b><\/span>
\n<\/b><\/span><\/span>The Diamond category of the\u00a0<\/span>CM<\/span>\u00a0Selections\u00a0<\/i><\/span>is the most elegant and delicate of the four. The coffees in this range are floral and clean, with a refined and gentle flavour profile.<\/span><\/p>\n
