Among these listed speakers is former World Barista Champion and Project Origin founder, Sasa Sestic.<\/h4>\n<p>Given across three days, the series of lectures by various speakers will take place at the Specialty Coffee Expo in Boston, USA. Each presenter will give a lecture on issues in and surrounding the specialty coffee industry, under different categories including Humanities &amp; Social Sciences, Sustainability, Science &amp; Innovation, Coffee Farming &amp; Processing, Roasting &amp; Retailing and Trading &amp; Commerce.<\/p>\n<p>Sestic&#8217;s talk, titled &#8216;<strong><em>Coffee Processing and the Future of Specialty: How Innovations in Processing Can Change Perceptions of Specialty Coffee<\/em><\/strong>&#8216;, will focus on the experiments carried out by Sestic and the Project Origin team with coffee producers around the globe.<\/p>\n<p>&#8220;I am really excited to present at SCA and share details of our experiment,&#8221; Sestic said. &#8220;In particular, I\u2019m excited to share how we turned an 80 point Catimor [varietal] to score 88 points in three years.&#8221;<\/p>\n<p>\u201cI am so thankful to the SCA to have this opportunity to speak with industry leaders from around the globe.&#8221;<\/p>\n<p>In this lecture, Sestic aims to show that recent innovations and developments in coffee processing and farming will inevitably change our perception of what is both &#8216;specialty&#8217; and high-quality coffee.<\/p>\n<p>Sestic&#8217;s various experiments with producers around the world, as well as on his own farms in Nicaragua and Honduras have explored the opportunity of creating exceptional coffee with low-scoring, &#8216;common&#8217; and under-valued varietals, typically considered outside the domain of &#8216;specialty&#8217; coffee.<\/p>\n<p>This lecture will also explore the cost of such findings, revealing the challenges and losses faced in the journey to increasing quality, production and sustainability in a commercial environment.<\/p>\n<p>In this lecture, Sa\u0161a will also address questions such as:<\/p>\n<ul>\n<li>&#8216;How do we turn commerically-grown habitats and farms into something more sustainable?&#8217;;<\/li>\n<li>&#8216;Can low-altitude coffee reach the same cup quality of high-altitude coffee?
