And how old are you willing to use?<\/strong><\/em><\/h2>\n\n\n\n<div style=\"height:14px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p class=\"has-text-align-center\">Whilst we all desire to work with fresh crop lots and revel in its vibrancy, are you aware that your access to \u2018fresh crop\u2019 may not be as \u2018fresh\u2019 as you think, making it important to understand what this term really refers to and how we approach the term.<\/p>\n\n\n\n<p class=\"has-text-align-center\">&nbsp;<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>The life of a green coffee bean needs to go through the following steps and timeline:<\/strong><\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Cherries and seeds grow on the coffee tree<\/li>\n\n\n\n<li>Cherries are picked or harvested when ripe during harvesting season and usually taken to the processing stage that same day, or within a couple of days of picking<\/li>\n\n\n\n<li>Coffee undergoes processing techniques, which can typically take between 1-5 days depending on fermentation and washing cycles<\/li>\n\n\n\n<li>Coffee then dries from 10-30 days depending on processing and weather<\/li>\n\n\n\n<li>Coffee is stored aside until it is time for shipping or export, where it is milled and packed in bags for delivery. Sometimes beans will wait for milling until a large enough load is ready to be shipped.<\/li>\n\n\n\n<li>Milled beans are then transported, usually across the seas, to the purchasing origin &#8211; in our case, Australia &#8211; which can take 1-4 months<\/li>\n\n\n\n<li>Once in Australia, border biosecurity can take 1-3 weeks to approve and release the cargo so we can receive it to our warehouse<\/li>\n\n\n\n<li>Once in our warehouse, we grade the coffee for QC purposes, and it is ready to dispatch to your roastery doors.&nbsp;<\/li>\n<\/ul>\n\n\n\n<div style=\"height:97px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>So what does this mean for your \u2018fresh harvest\u2019 lot?<\/strong>&nbsp;<\/h2>\n\n\n\n<p>Green beans arrive at your roastery 4-8 months <em>after<\/em> harvest, and this is assuming you receive the beans immediately after we do. Let\u2019s say you roast those beans over the next couple of months, that means you are using coffee beans that are 6-10 months old in the most optimal and streamlined timeline possible.<\/p>\n\n\n\n<p>It is very reasonable to assume that most green beans are roasted somewhere between 6-18 months post harvest. So, where does this leave us with the term \u2018fresh crop\u2019 and the need to chase it? Whilst you may be able to put a dated timeline on this term, we think that perhaps, we should be able to approach non-fresh-crop lots with a little leniency toward flavour expression, and not jump immediately from a lot being called fresh crop to old crop without room in the middle.<\/p>\n\n\n\n<div style=\"height:86px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Now that we have addressed fresh crop, it is worth mentioning the <strong>potentials and the downfalls of old crop,<\/strong> too. Don\u2019t get us wrong &#8211; old crop and stale coffee certainly has a character that is not akin to the vibrancy we love in fresh harvest stock.<\/p>\n\n\n\n<p>It may be colloquially considered to define a lot as \u2018old crop\u2019 if the latest harvest cycle has begun again, and a <em>fresher<\/em> crop is available for use, <strong>but does this mean the coffee is bad and stale?<\/strong> <strong>We would argue not. <\/strong>In our experience of cupping and storing green coffee from over 15 origins for several years, there is no definitive time after a harvest that coffee should shift into that category of \u2018old crop\u2019 as if to imply quality dropping is directly related to time. Coffee should be assessed case by case, cup by cup, and the performance of the lot when cupping should outweigh its time post harvest.<\/p>\n\n\n\n<div style=\"height:88px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>So, what can influence this longevity of the profile if time is a variable? <strong>Many factors about coffee can impact its longevity and age-ability<\/strong>. These include the beans\u2019 density &#8211; which is closely related to, but not solely defined by, the altitude in which it was grown &#8211; processing techniques, drying methods and drying times, storage conditions &#8211; both at the farm post processing and in our warehouses &#8211; packaging type and condition, moisture level, and moisture stability. Project Origin measures variables such as moisture level and humidity in an attempt to preserve our green beans throughout its post-harvested and imported life.<\/p>\n\n\n\n<p>Natural, anaerobic style processes, carbonic maceration, and supernatural style processing methods often allow a coffee to hold a <strong>more stable profile shelf life due to the increased sugars<\/strong> in the bean from leaving the fruit on during fermentation and drying. Whilst it is often typical that clean washed processed coffees lose their vibrancy with age, we think the containment of sugars in the beans from naturally processed lots allow that shelf life to hold on that little bit longer, redefining where we would place that \u2018fresh crop\u2019\/\u2019old crop\u2019 timeline division.<\/p>\n\n\n\n<div style=\"height:211px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Since we, at Project Origin, value cup profile as one of our primary determinations of quality, we often assess and reassess lots as they age to understand how we approach the concept of old and new crops, and in our time of cupping, assessing, and re-cupping and reassessing, we think that the line dividing \u2018fresh crop\u2019 and \u2018old crop\u2019 is a little blurred. <strong>At the end of the day, it\u2019s all about the profile in the cup &#8211; do you like it?<\/strong> Yes?
