Regarded as the birthplace of coffee, Ethiopia has some of the world’s widest genetic variations of coffee trees. Most of these trees are considered ‘garden coffee’, grown in small lots in farmers’ backyards before the cherries are sold to washing stations that handle the processing. Project Origin works closely with several washing stations in different regions to source green coffee beans that capture the vast array of Ethiopian flavour profiles and introduce our signature carbonic maceration techniques to create even more unique profiles in Guji and Yirgacheffe. Our Guji CM Washed Diamond was used by Agnieszka Rojewska to win the 2018 WBC in Amsterdam.
Ethiopia has one main harvesting period from October to February. Coffees will typically ship from each origin about 3-4 months after the harvest begins.
