Ainaro

Coffee from Ainaro is harvested at high altitudes and under the shade of casuarina trees. The cool climate allows for slower fruit maturation compared to other parts of Timor-Leste, and as a result the Ainaro harvest is much later. Although access to water can be a challenge for many farmers, the washed method remains the most common option due to the faster drying time and high output. In 2019 our partner farmer Mateus Lopes produced the best washed coffee in Timor-Leste at the National Coffee Quality Competition. Through a partnership with Orijem Timor, farmers at Ainaro have started to produce natural processed coffees and began improving their overall quality of processing. As a result, their coffees can now attract higher prices in the specialty coffee industry, and Project Origin are proud to present the results of the work here.
