‘CM Selections’ launch

Project Origin is excited to announce the launch of its new CM Selections range, a selection of the finest Carbonic Maceration experimental coffee lots created across the world in a particular year.

The Carbonic Maceration (CM) process was first introduced to the world by Project Origin founder, Saša Šestić during the 2015 World Barista Championship in Seattle. Since then, Project Origin has researched and developed a range of Carbonic Maceration techniques in a variety of countries.

CM Selections coffees exist in both washed and natural processes and involve the careful control of specific yeasts during fermentation to create particular flavour experiences.

“We are really thrilled to be able to share these coffees with roasters around the world,” Project Origin General Manager, Habib Maarbani said.

“The Carbonic Maceration [CM] process creates a consistent and controlled environment in which we can really push and develop the flavour profiles of unique coffees from around the world.”

In the specialty coffee industry, coffees are typically scored, graded and sold according to a score out of 100. However, the lots in the CM Selections range will be publicly listed in one of four categories, based upon their flavour profile.

“We found that in the case of the [Carbonic Maceration] coffees, we couldn’t really attribute a particular number or score to them,” Maarbani said.

“We’ve opted for this system of flavour-based categorisation so that the consumer really knows what they’re looking at when they’re searching for a coffee to suit a profile, or a particular experience.”

The CM Selections coffees are available in four categories: Indigo, Jasper, Amber and Diamond. Each category, named after a precious jewel, gives a generalised description of different flavour profiles created by the Carbonic Maceration process.

Several coffees from the CM Selections lots have already made their way into the hands of competitors around the world, with some of the first being used publicly at the Melbourne International Coffee Expo (MICE) in late March.

Roasters can expect to see these coffees offered on the monthly Project Origin product list in the coming weeks.

CM Selections categories

Indigo
The Indigo range of CM Selections includes coffees that have a profile of intense flavour, powerful fruit qualities and unique aromatics. This includes coffees that have undergone extensive and experimental fermentation, creating bold and strong flavour profiles.

Jasper
The Jasper category of CM Selections includes those coffees which have a flavour profile reminiscent of red, orange and yellow fruits. These coffees have undergone a range of carbonic maceration processes, in order to provide maximum flavour and clarity with medium level intensity.

Amber
The Amber range of the CM Selections includes coffees that have a delicate flavour profile and sweetness, with a flavour profile of orange and yellow fruits. The CM techniques used to process these coffees look to maximise delicacy and transparency of flavour, rather than intensity. 

Diamond
The Diamond category of the CM Selections is the most elegant and delicate of the four. The coffees in this range are floral and clean, with a refined and gentle flavour profile.
